Lamb Kleftiko
Method
OVERNIGHT Or… a few hours before cooking, Prepare Seasoning:
Add Seasoning to Blender:
6 garlic cloves
3 tbsp Dried Oregano
1 tbsp Rosemary
½ tsp Ground Cinnamon
1 tsp Kosher salt
1 tsp Black Pepper olive oil
Juice of Lemon
2 tbsp Extra Virgin Olive Oil
SERVE
with the Roasted Vegetables
or Greek Style Salad
Using a sharp knife, create lots of holes all over the lamb, and rub in the paste, pushing it deep into the holes.
Transfer the lamb to a large food bag, pour in the lemon juice and marinate overnight.
The next day, take the lamb out of the fridge
1 hr before you want to cook it
Heat oven to 160C/140C fan/gas 3.
140°C Fan
Oven dish: Lay out large piece of silver foil
Drizzle Olive Oil
Lay half sliced Red Onion
3 Bay Leaves
1 Thickly sliced Tomato
Half Lemon Slices
Some of the Lamb Seasoning
Place Lamb on Veg, Fatty side on top
Drizzle some Olive Oil
Pour Rest of seasoning on top
Add rest of Onion
1 Thickly sliced Tomato & Lemon
3 Bay Leaves
Place New Potatoes around Lamb
Add other vegetables if required
Sprinkle 2 tsp Smoked Paprika over top
Scrunch Foil together - make air tight
But leave space inside for juices to circulate
Pop into Oven
Slow Cook for 4 ½ Hours to melt all the fat
140°C Fan Oven
4 ½ HOURS
Remove from Oven
Open top & baste Lamb in juices
Increase oven temp to 200°C Fan
Return to Oven for 10 mins until browned
200°C Fan Oven
10 mins
