Beef Stifado

Method

OVERNIGHT   Or… a few hours before cooking, Prepare Seasoning:  Research This to infuse meat with sauce




Put meat in a frying pan and sear the meat then

add Glass Olive Oil

1 Chopped Onion

4 Garlic Cloves

Until Onions start to go soft

Goto Ingredients


SERVE

With Orzo Pasta

Or just warm crusty bread

add Tin Chopped Tomatoes

½ Cinnamon Stick

1 Stock Cube

4 Cloves

1 tsp Ground Nutmeg

4 bay leaves

1 tbsp Rosemary

2 tbsp Tomato Puree/Paste

& salt and pepper to taste. keep stirring to let all the ingredients mix together

whilst cooking place 500g of shallots into hot water to soften the skin and peel

then fry these in a little olive oil, be careful not to burn them, just aim to soften them

and add a little colour

add these to Stifado after 1Hr of cooking

5 mins

Add glass of red wine

2 tbsp red wine vinegar

Cover & leave for 5 minutes

Stir for 5 mins

Transfer to casserole dish

add 500ml water

be careful not to drown the sauce keeping checking you dont want it to dry out & add water if needed aiming for a thick rich sauce texture

140° for 60 mins


140° for a further

60 mins


Make Orzo Pasta as per Instructions on packet
