Bruschetta
Method
1. Dice 700g Cherry Tomatoes
6. Put Bruschetta mix onto bread with Olive Oil side facing up & serve.
2. Dice 2-3 cloves of Garlic in food processor & add to bowl.
3. Add 6-8 fresh basil leaves, thinly sliced or chopped; 1 tbsp Extra Virgin Olive Oil; 1 tsp Balsamic Vinegar; ¾ tsp Sea Salt; ½ tsp Black Pepper & mix.
4. Slice a baguette on a diagonal making ½ inch slices. Brush one side with Olive Oil.
Toast in grill for 5-6 mins until lightly browned around the edges.
