Caribbean Chicken
Method
1. Dice 1 Onion, 2-3 cloves of Garlic and 1 red pepper
6. Add 250ml coconut cream and stir until well combined; cook for 5 more minutes.
2. Cook Onions, Garlic & Pepper over medium-high heat for 4-5 mins
3. Add can of chopped tomatoes,
300g Chicken, 2 cubes Spinach
3 tbsp Curry Powder
1 tsp Ginger Paste
2 Chopped Chilli Peppers
Season with Salt & Pepper.
4. Reduce heat to low, stirring until mixture has thickened and chicken is cooked through, 15 to 25 minutes.
Sprinkle with Cinnamon powder
Garnish with Cilantro.
Serve immediately.
5. Follow Rice & Peas recipe. Heat to boiling, add rice and simmer for 15 mins.
